Vegan French Toast Made with The Neat Egg

Vegan French toast with strawberries

I love breakfast foods ... and one of the saddest things for me was thinking I had to give up French toast when I became vegan. But guess what? You don't have to because there are a lot of recipes out there that use egg substitutes like The Neat Egg (or you can mix chia seeds or flax seeds with water ... pretty freakin' amazing). The only ingredients in The Neat Egg are chia seeds and garbanzo beans, which just makes it that much neater

This particular recipe is from the Neat blog, and it's suuuper simple. The level of deliciousness you get from the time you spend to make it is incredible. Before we get to the French toast, let's take a quick look at how to mix a Neat Egg together.

How to Prepare a Neat Egg

  1. Use 2 tbsp of water for every 1 tbsp of Neat Egg
  2. Mix well

That's it. Pretty neat, huh?

Vegan French Toast Recipe

Adapted from the Neat Blog

Ingredients: (good for 3 slices of bread)

  • Bread (I used Trader Joe's Whole Grain & Flax Bread)
  • 1 Neat Egg serving (1 tbsp of Neat Egg + 2 tbsp of water)
  • 1/2 tbsp of vanilla extract (I used Trader Joe's Pure Bourbon Vanilla Extract)
  • Generous sprinkling of cinnamon (recipe calls for 1/2 tbsp but I used about 1 tbsp)
  • 1/2 cup unsweetened soy milk (or any non-dairy milk of your choice)
  • Coconut oil (for cooking)

Mix the Neat Egg with vanilla extract in a bowl. Add the cinnamon and 1/2 cup of soy milk (or any milk substitute) and whisk it all together.

Brush an even coat of the mixture onto one side of the bread.

Heat up about 2 tbsp of coconut oil in pan to prevent sticking. Cook over low-medium heat. While one side of the bread is cooking, brush on the mixture to the other side. Flip after about 3-4 minutes or until you get that golden brown texture.

Serve with your favorite fruits (e.g., strawberries, blueberries, banana) and maple syrup. Drizzle or dip into the syrup and enjoy!!
