Follow Your Heart Vegan Scrambled Eggs
Do you miss breakfast egg burritos? Now you can have your egg and eat it too…the vegan way. Follow Your Heart has an egg substitute that, when mixed with water, blends into a nice, fluffy consistency that resembles the texture of scrambled eggs. It has a neutral flavor that goes well with any of your favorite seasonings, spices and sauces. As for its appearance, thanks to nutritional yeast, which gives it a pale-yellow color, it comes pretty close to a regular scrambled egg once cooked.
Put it on a corn or flour tortilla—small for soft tacos or large for burritos; you really can’t go wrong. Add black beans, bell peppers, onions, mushrooms (if you’re a fan of them like I am), or even some meatless crumbles to add even more texture, protein and heartiness. Dress it up with salsa, raw garlic spread (I'm addicted to Majestic Garlic, which you can get at Whole Foods), vegan cheese and even Follow Your Heart’s creamy garlic dressing.
Or you can eat it on its own or with a side of vegan bacon or vegan sausages, hashbrowns or tater tots, and avocado slices. The options are endless!
