Although we traveled along the Pacific Northwest in cities where there are substantial options for vegan food, we also found ourselves in areas or situations where our options were limited. It gave me hope knowing that even in the unlikeliest places, a growing demand of vegan food exists ... and that perhaps a vegan world isn't too far in the distant future.
